Weissbier Recipe

BJCP 10A · Weissbier

The Bavarian wheat beer: hazy, with a big head and banana and clove aromas that come from the yeast, not from fruit.

You will also need

Yeast: Dry Bavarian wheat yeast, such as WB-06: one 11.5 g (0.4 oz) packet. It's what gives the banana and clove.

Water: About 28.5 L (7.5 gal): 14 L (3.7 gal) for the mash and 14.5 L (3.8 gal) for the sparge.

Priming sugar: 10 g of table sugar per liter of beer bottled (1.3 oz/gal), about 190 g (6.7 oz) for 19 L (5.0 gal). It's highly carbonated: use heavy bottles, like wheat beer or Champagne bottles.

Hops: pellets, kept in the freezer until brew day.

Step by step

  1. Heat 14 L (3.7 gal) of water to 72 °C (162 °F), add the crushed malts and stir well. Hold about 66 °C (151 °F) for 60 minutes, covered. Wheat has no husk: if the grain bed compacts during the sparge, add a handful of rice hulls.
  2. Sparge with 14.5 L (3.8 gal) of water at 76 °C (169 °F) until you collect about 24 L (6.3 gal) of wort at 1.045–1.046.
  3. Boil for 60 minutes, uncovered, with the 28 g (1.0 oz) of Hallertau in from the start.
  4. Chill to 19 °C (66 °F), transfer about 20 L (5.3 gal) to the fermenter and take a gravity reading: it should be around 1.052.
  5. Pitch the yeast and ferment at 19 °C (66 °F). Warmer (21–22 °C / 70–72 °F) gives more banana; cooler (17 °C / 63 °F), more clove.
  6. Once the gravity holds at 1.012 for three days in a row, bottle with the sugar. Drink it young, at two or three weeks, with its yeast: at the end, swirl the bottle to rouse the sediment and pour it into the glass.

Don't add aroma hops: in this style the yeast is in charge.

If your Hallertau isn't 4% alpha acids, use 28 × 4 ÷ your percentage to get the grams.

Frequently asked questions

How strong will this Weissbier be?

About 5.3% ABV: it starts at 1.052 and finishes at 1.012, and (OG − FG) × 131.25 gives that percentage.

How long until it is ready?

One brew day, fermentation at 19 °C (66 °F) for 10–14 days and about two weeks in the bottle: give it a little over a month.

Can I use a different bittering hop?

Yes. What matters is keeping the bitterness: if you use another hop instead of Hallertau Mittelfrüh at 4% alpha acids, work out the grams from its alpha acids (or with the IBU calculator) to stay at about 12 IBUs.

What if my system does not get 72% efficiency?

Your gravity will come out different. Scale the base malt up or down (or add a little dry malt extract to the boil if you fall short) and recalculate the water with the calculator.
